Tree Nuts

Ingredients

  • 1 cup chopped almonds
  • 1 cup chopped walnuts
  • 2 cups gluten
  • free phyllo pastry sheets, finely crushed
  • 1 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cardamom
  • 2 tbsp unsalted butter, melted
  • 8 oz dark chocolate, for coating

Instructions

  1. In a large bowl, mix together the almonds, walnuts, crushed phyllo pastry, sugar, and spices until well combined.
  2. Using your hands or a spoon, form the mixture into 16 small truffle balls, about the size of a cherry. Chill them in the refrigerator for at least 30 minutes.
  3. In a microwave safe bowl, melt the chocolate in 30 second intervals, stirring after each interval until completely smooth.
  4. Remove the truffles from the refrigerator and dip each one into the melted chocolate, coating it evenly. Place the coated truffles onto a parchment lined tray and chill until set, about 15 minutes.

Chef’s Insight

The key to perfect truffle coating is a smooth, warm chocolate. Make sure it's not too hot, as this can cause the truffles to melt.

Notes

These truffles are best enjoyed at room temperature.
