  • 1/2 cup unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1 cup heavy cream
  • Fresh raspberries and mint leaves for garnish

Instructions

  1. In a heatproof bowl set over simmering water, melt the chocolate and butter together until smooth. Remove from heat and whisk in egg yolks one at a time until fully incorporated.
  2. In a separate bowl, beat the cream until soft peaks form. Fold this into the chocolate mixture gently but thoroughly.
  3. In another bowl, beat the egg whites with a pinch of salt until they hold stiff peaks. Fold these into the chocolate mixture as well.
  4. Pour the mixture into a greased and parchment lined springform pan and smooth the top. Refrigerate for at least 4 hours or overnight.
  5. When ready to serve, garnish with fresh raspberries and mint leaves.
