Ingredients
- 10 gluten
- free ladyfingers
- 3 large egg yolks
- 1/2 cup granulated sugar
- 7 oz mascarpone cheese
- 1 cup heavy cream, cold
- 1/4 cup strong brewed coffee (cooled)
- 1/4 cup dark chocolate, finely chopped
- 1/4 cup unsweetened cocoa powder
- 1 tsp pure vanilla extract
- A pinch of salt
Instructions
- Brew the coffee and let it cool down to room temperature.
- In a heatproof bowl, whisk together egg yolks, sugar, and a pinch of salt over a double boiler until the mixture thickens and reaches 160°F (71°C) on a candy thermometer.
- Remove the bowl from heat and whisk continuously until the mixture cools down to room temperature.
- In a separate bowl, whip heavy cream to stiff peaks. Set aside.
- Add mascarpone cheese into the egg yolk mixture and fold in half of the whipped cream until fully incorporated.
- Gently fold in the remaining whipped cream into the mascarpone mixture until well combined.
- Dip each ladyfinger briefly in coffee to soak and layer them at the bottom of two dessert glasses or ramekins.
- Spoon the mascarpone cream over the ladyfingers and spread it evenly.
- Repeat the process, finishing with a layer of mascarpone cream.
- Place the desserts in the refrigerator for at least 2 hours to set.
- In a small saucepan, heat heavy cream until hot but not boiling. Pour it over the finely chopped dark chocolate and let it sit for a minute.
- Stir the chocolate and cream together until smooth, then stir in cocoa powder and vanilla extract. Let the ganache cool to room temperature.
- Once the tiramisu has set, pour the ganache over each dessert, spreading it evenly with a palette knife or spoon.
- Decorate with shaved chocolate or cocoa powder, if desired.
Chef’s Insight
To achieve the perfect coffee soak for the ladyfingers, do not oversoak them to prevent them from becoming too soft and losing their structure.
