Ingredients

  • 20 sheets of filo pastry
  • 1 cup chopped walnuts
  • 1 cup chopped pistachios
  • 1 cup melted vegan butter
  • 1 tsp ground cinnamon
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 tbsp lemon juice
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a small bowl, mix together the cinnamon and sugar.
  3. Arrange two sheets of filo pastry on a flat surface. Brush with melted vegan butter and sprinkle with the cinnamon sugar mixture. Repeat with five more sets of filo sheets, creating six layers in total.
  4. Carefully cut the stacked filo layers into 2 inch squares.
  5. Arrange the filo squares on a baking sheet lined with parchment paper, spacing them evenly apart.
  6. Bake for 10 minutes or until golden brown and crispy. Remove from the oven and allow to cool.
  7. In a saucepan, combine water, granulated sugar, lemon juice, and vanilla extract. Bring to a boil and simmer for 5 minutes until the syrup thickens slightly.
  8. Drizzle the syrup over the baked filo squares and allow them to soak up the flavors.
  9. Serve on a platter, garnished with chopped walnuts and pistachios.
