Instructions

  1. In a large pot, combine the water, salt, and butter over medium heat. Bring to a boil, then reduce the heat to low and stir in the flour until a dough forms. Continue cooking for 2 minutes, stirring constantly. Remove from heat and let cool slightly.
  2. Transfer the dough to a stand mixer fitted with a paddle attachment. Add cinnamon and vanilla extract, and mix on low speed until combined.
  3. Transfer the dough to a piping bag with a large star tip. Pipe 5 inch long strips of dough onto a parchment lined baking sheet. Cut off any excess dough at the ends using a pair of kitchen scissors. Cover and chill in the refrigerator for 20 minutes.
