Ingredients

  • 2 lbs lean ground meat (beef or pork)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 4 large eggs
  • 1/2 cup almond flour
  • 2 tbsp olive oil
  • 1/2 cup tomato sauce
  • 1 tbsp paprika powder
  • 1 tsp caraway seeds, crushed
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  2. Stir in the ground meat, breaking it up as you cook. Brown the meat completely.
  3. Add diced bell peppers, paprika powder, caraway seeds, salt, and pepper to taste. Cook for 5 minutes.
  4. Pour in the tomato sauce and let simmer for about 10 12 minutes.
  5. While the meat mixture is simmering, prepare the egg nests. In a separate pan, whisk eggs with almond flour until smooth.
  6. Heat a non stick skillet or griddle over medium heat, pour or ladle egg mixture, and cook until set.
  7. When the Gulyás is done, remove from heat and let it rest for a minute.
  8. To plate, spoon meat mixture onto the center of each Egg Nest. Garnish with fresh parsley and serve immediately.
