Ingredients

  • 2 cups uncooked jasmine rice
  • 4 tablespoons vegetable oil, divided

  • 2 cloves garlic, minced

  • 1 teaspoon sugar
  • 1/2 teaspoon ground white pepper
  • 1 teaspoon salt, or to taste
  • 2 cups cooked jasmine rice
  • 1 block (16 oz) firm tofu, crumbled
  • 3 tablespoons nutritional yeast
  • 1/4 cup unsweetened almond milk
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crushed peanuts
  • 1/2 cup Sambal Oelek (Indonesian chili paste)
  • 2 eggs, optional for non
  • vegans

Instructions

  1. Rinse the uncooked jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions and set aside.
  2. In a large pan or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 3 4 minutes.
  3. Stir in the tomato ketchup, soy sauce, sugar, ground white pepper, and salt. Cook for another 1 2 minutes, or until the sauce has thickened slightly.
  4. Add the cooked jasmine rice to the pan and mix well with the sauce. Cook for an additional 3 4 minutes until the rice is heated through and has absorbed the flavors. Remove from heat and set aside.
  5. In a separate pan, heat another 2 tablespoons of vegetable oil over medium heat. Add the crumbled tofu and cook until browned on all sides. Stir in the nutritional yeast and almond milk, cooking for an additional 2 3 minutes or until the tofu is creamy.
  6. In a small pan or skillet, fry the eggs over medium heat if using. Otherwise, set aside the cooked tofu scramble.
  7. Assemble the dish by placing a scoop of Nasi Goreng in the center of a plate, topping with the Creamy Tofu Scramble (and fried egg, if using). Garnish with green onions, cilantro, crushed peanuts, and a dollop of Sambal Oelek.
