  • 4 large russet potatoes, peeled and quartered
  • 1/2 cup whole milk or cream
  • 2 tbsp unsalted butter
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh dill

Instructions

  1. In a large pot, brown the beef chunks in batches over medium high heat. Transfer to a plate and set aside. In the same pot, add onion, carrots, and celery, cooking until softened. Add garlic and cook for an additional 1 minute. Stir in flour, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for 2 minutes to let the flour cook out. Slowly whisk in Guinness beer and beef broth, stirring until well combined. Bring to a boil, then reduce heat and simmer for 10 15 minutes, or until sauce has thickened slightly. Add the browned beef back into the pot, along with any accumulated juices from the plate. Cover and let simmer for another 2 hours, or until the meat is tender and pulls apart easily. While the beef mixture cooks, prepare the mashed potatoes. Boil the potatoes in a large pot of water until fork tender. Drain and return to the pot. Add milk, butter, salt, and pepper to taste. Mash until smooth, then fold in parsley, chives, and dill. Keep warm. Preheat oven to 350°F (175°C). Transfer the beef mixture to a deep pie dish or casserole dish, ensuring an even layer on the bottom. Top with mashed potatoes, spreading them evenly over the meat mixture. Bake for 25 30 minutes, or until the top of the potatoes is golden brown and slightly crispy. Allow to rest for 10 minutes before serving.
