1. 6 large eggs 2. 4 slices bacon 3. 4 pork sausages 4. 2 cups black pudding, cooked and sliced 5. 4 portobello mushrooms, sliced 6. 4 tomatoes, sliced 7. 1 small avocado, sliced 8. 1/2 cup grated cheddar cheese 9. 1 tbsp butter 10. Salt and pepper to taste 11. Fresh parsley for garnish
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet, cook the bacon and sausages over medium heat until browned and cooked through. Remove from skillet and set aside.
In the same skillet, melt butter and add mushrooms, tomatoes, and season with salt and pepper. Cook for 5 minutes or until tender.
In a separate pan, fry the black pudding slices for 2 3 minutes on each side. Remove from pan and set aside.
Whisk eggs in a bowl, add salt and pepper to taste, and pour into an ovenproof dish. Top with cooked mushrooms, tomatoes, bacon, sausages, black pudding, avocado slices, and grated cheddar cheese.
Bake for 20 25 minutes or until the egg is set.
Garnish with fresh parsley before serving.
