  • 1 tablespoon sugar
  • 1 teaspoon baking soda

  • 1 1/2 cups buttermilk
  • 3 tablespoons cold unsalted butter, cubed
  • 1 large egg, beaten
  • 1 teaspoon apple cider vinegar Herb Butter:
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon finely grated lemon zest
  • Salt and pepper, to taste

Instructions

  1. For the Soda Bread:
  2. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together the gluten free all purpose flour, oat flour, sugar, baking soda, salt, and xanthan gum (if using) until combined.
  4. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. In a separate bowl, whisk together the buttermilk, egg, and apple cider vinegar. Pour into the dry ingredients and mix just until combined.
  6. Transfer the dough to the prepared baking sheet and shape it into a round loaf. Use a serrated knife to cut an "X" on top of the loaf.
  7. Bake for 40 45 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool slightly before slicing. For Herb Butter:
  8. In a small bowl, combine the softened butter, parsley, chives, lemon zest, and season with salt and pepper to taste. Mix well.
