Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until translucent, about 3 minutes.
  2. Stir in the garlic, bell pepper, and cook for another 2 minutes.
  3. Add the chopped tomatoes, paprika, cumin, black pepper, red pepper flakes, and salt to taste. Cook for about 10 15 minutes, or until the tomato sauce has thickened.
  4. Stir in half of the fresh herbs, reserving some for garnish.
  5. Carefully crack each egg into a small bowl and gently slide them into the skillet, spacing them evenly. Cook over low heat for 6 8 minutes or until the eggs are set but the yolks remain runny.
  6. Season with additional salt and pepper if needed, then garnish with remaining fresh herbs.
  7. Serve immediately on a bed of crispy gluten free toast.
