1 cup blanched almonds 1/2 cup granulated sugar 1 large egg, room temperature 1 teaspoon pure vanilla extract Zest of 1 orange Pinch of salt Confectioner's sugar for dusting
Instructions
a. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. b. In a food processor, pulse the almonds until they form a fine meal. Transfer 1/2 cup of the almond meal to a medium bowl and set aside. c. Add the granulated sugar, egg, vanilla extract, orange zest, and pinch of salt to the remaining almond meal in the food processor. Process until well combined and a thick dough forms. d. Scoop out the dough and shape it into 12 equally sized balls. Place them onto the prepared baking sheet, spaced evenly apart. e. Bake the bliss bites for 15 minutes or until they are golden brown. Remove from oven and let cool slightly on the pan before transferring to a wire rack to cool completely. f. Once fully cooled, dust lightly with confectioner's sugar.
