16 fresh asparagus spears, trimmed 8 slices of high
quality prosciutto, thinly sliced 4 oz goat cheese, softened 2 tbsp olive oil Salt and pepper, to taste Optional: Fresh parsley for garnish
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Rinse the asparagus spears under cold water and pat dry. Season with salt and pepper to taste.
Lay out the prosciutto slices on a clean surface. Place a dollop of softened goat cheese at one end of each slice.
Carefully roll up each prosciutto goat cheese bundle, ensuring that the asparagus is fully wrapped.
Arrange the bundles seam side down on the prepared baking sheet. Drizzle with olive oil and season again with salt and pepper if needed.
Bake for 12 14 minutes or until the prosciutto is crisp and the asparagus is tender.
Remove from the oven and let cool slightly before serving. Garnish with fresh parsley, if desired.
