1 cup sushi rice 2 cups water 4 oz shiitake mushrooms, thinly sliced 4 oz enoki mushrooms, cut into 1 inch pieces 1/4 cup soy sauce (gluten free) 1 tbsp mirin 1 tbsp rice vinegar 2 tsp sugar 1 tbsp vegetable oil 2 green onions, thinly sliced 1/4 cup pickled red radish, julienned To taste, salt and pepper
