1/2 cup white chia seeds
1 can (14 oz) full
fat coconut milk
1/2 cup almond milk
Zest and juice of 2 limes
3 tbsp honey or maple syrup
1 tsp pure vanilla extract
Pinch of salt
Fresh mango salsa:
2 ripe mangoes, diced
1/4 cup diced red onion
Juice of 1 lime
2 tbsp chopped fresh cilantro
Pinch of salt
Instructions
a. In a large mixing bowl, combine chia seeds, coconut milk, almond milk, lime zest and juice, honey or maple syrup, vanilla extract, and a pinch of salt. Whisk well to combine and remove any lumps. b. Cover the mixture and refrigerate for at least 4 hours or overnight, until it reaches a pudding like consistency. c. Prepare the fresh mango salsa by combining diced mangoes, red onion, lime juice, chopped cilantro, and a pinch of salt in a small bowl. Mix well and set aside to let flavors meld. d. When ready to serve, divide the chia pudding among four bowls or glasses. Top each with an equal portion of the fresh mango salsa. e. Garnish with additional lime zest and a sprig of fresh cilantro, if desired.
