1/2 cup lemon herb sauce (recipe below) Lemon Herb Sauce:
1/2 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1/2 cup extra virgin olive oil
1/4 cup fresh lemon juice
1 garlic clove, minced
Salt and pepper to taste
Instructions
In a mixing bowl, combine the almond flour, crumbled feta cheese, slivered almonds, parsley, dill, garlic powder, black pepper, and salt. Mix well.
Cut a deep pocket in each chicken breast and season with salt and pepper.
Divide the almond feta mixture evenly among the chicken breasts, stuffing each pocket.
Roll up each stuffed chicken breast tightly and secure with toothpicks if needed.
Place the egg in a shallow dish and beat well. In another shallow dish, place the almond flour for coating.
