Ingredients

  • 8 large eggs
  • 1 cup fresh parsley
  • 1/2 cup extra virgin olive oil
  • 4 oz smoked salmon, thinly sliced
  • 1 medium avocado
  • 1/2 cup cheddar cheese, grated
  • 1/4 cup red onion, finely chopped
  • 1 garlic clove
  • Salt and pepper, to taste
  • Fresh lemon juice

Instructions

  1. a. In a blender, combine parsley, olive oil, garlic, salt, pepper, and lemon juice. Blend until smooth for the chimichurri sauce. b. Slice avocado into 8 pieces and scoop out a small portion from each half to make a hollow. Fill the hollow with cheddar cheese. c. In a bowl, beat eggs with salt and pepper, then stir in 1/4 cup of chimichurri sauce. d. Heat 2 tsp olive oil in a non stick pan over medium heat. Pour half of the egg mixture into the pan, allowing it to set for a few seconds before flipping. Cook until just set. Repeat for the second omelette. e. Top each omelette with sliced smoked salmon and drizzle remaining chimichurri sauce over the top. Serve alongside avo cheese bites and enjoy!
