Ingredients
1. 4 large ripe avocados, halved and pitted 2. 8 slices of nitrate
free bacon, cooked crisp and crumbled 3. 4 large eggs 4. 1/4 cup freshly grated Parmesan cheese 5. Salt and black pepper, to taste 6. Optional: cherry tomatoes, chopped parsley, and a drizzle of hot sauce for garnish
Instructions
Preheat oven to 400°F (200°C).
Carefully scoop out the pit from each avocado half, leaving a hollow in the center.
Place avocado halves on a baking sheet lined with parchment paper.
Bake for 5 minutes to slightly warm the avocados.
Remove from oven and let cool slightly.
Fill each avocado boat with crumbled bacon, then sprinkle Parmesan cheese over top.
Make a small well in the center of each boat for poaching the egg.
Poach eggs one at a time in a shallow pan of simmering water with a splash of white vinegar.
Gently slide each cooked egg into its respective avocado boat, season with salt and pepper, and garnish as desired.
