Ingredients

  • 1. 4 large ripe avocados, halved and pitted 2. 8 slices of nitrate
  • free bacon, cooked crisp and crumbled 3. 4 large eggs 4. 1/4 cup freshly grated Parmesan cheese 5. Salt and black pepper, to taste 6. Optional: cherry tomatoes, chopped parsley, and a drizzle of hot sauce for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Carefully scoop out the pit from each avocado half, leaving a hollow in the center.
  3. Place avocado halves on a baking sheet lined with parchment paper.
  4. Bake for 5 minutes to slightly warm the avocados.
  5. Remove from oven and let cool slightly.
  6. Fill each avocado boat with crumbled bacon, then sprinkle Parmesan cheese over top.
  7. Make a small well in the center of each boat for poaching the egg.
  8. Poach eggs one at a time in a shallow pan of simmering water with a splash of white vinegar.
  9. Gently slide each cooked egg into its respective avocado boat, season with salt and pepper, and garnish as desired.

Chef’s Insight

To prevent the avocado from becoming too soft while warming, bake at a lower temperature for a shorter time and allow it to finish cooking with residual heat from the eggs.
