1 cup almond flour
1 cup walnuts, finely chopped
4 tbsp unsalted butter, melted
3/4 cup erythritol
1 cup water
2 tsp cinnamon
1 tsp cloves, ground
1/2 tsp cardamom, ground
1 cup plain Greek yogurt
2 tbsp honey (for Keto diet, use sugar
free honey substitute)
1/4 cup crushed pistachios
Instructions
Preheat oven to 350°F (175°C). Grease a parchment paper in an 8x8 baking dish.
In a large bowl, combine almond flour, walnuts, erythritol, cinnamon, cloves, and cardamom. Stir in melted butter until the mixture forms a crumbly dough.
Press half of the mixture into the prepared baking dish, creating an even layer. Bake for 20 minutes, then remove from oven and let cool completely.
In a small saucepan, combine water and 1/2 cup erythritol, bring to boil. Simmer until the syrup thickens slightly, about 5 minutes, then remove from heat and stir in honey or sugar free substitute.
Cut the cooled crust into six equal squares and place a square in each serving glass. Top with a dollop of Greek yogurt, pour syrup over the yogurt, repeat layers, and finish with crushed pistachios.
Refrigerate parfaits until chilled before serving.
