  • 2 medium zucchinis, spiralized into noodles

  • 1 tbsp Cajun seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  4. In the same skillet, add lemon juice and bring to a simmer. Cook for 1 minute to reduce slightly.
  5. Stir in parsley and Parmesan cheese, stirring until cheese is melted and sauce is smooth.
  6. Add spiralized zucchini noodles to the skillet and toss with the sauce until well coated.
  7. Return shrimp to the skillet and cook for an additional 2 minutes to heat through.
  8. Serve immediately, garnished with additional parsley if desired.
