  • 3 large zucchini, spiralized
  • 1/4 cup avocado oil
  • 2 tbsp Cajun seasoning (gluten

Instructions

  1. Prepare the zucchini noodles by spiralizing three large zucchinis. Set aside.
  2. In a large bowl, combine shrimp with Cajun seasoning, salt, and black pepper. Toss until evenly coated.
  3. Heat 2 tablespoons of avocado oil in a large skillet over medium high heat. Add the seasoned shrimp and cook for 2 3 minutes on each side or until pink and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add another 2 tablespoons of avocado oil. Sauté zucchini noodles for 3 4 minutes or until tender but still al dente. Season with salt and black pepper to taste.
  5. Add cooked shrimp back into the skillet with the zucchini noodles, stirring gently to combine.
  6. Remove from heat, and garnish with green onions and fresh parsley. Serve immediately.
