Ingredients
- 2 portions of salmon fillet (6 oz each)
- 1 lb large prawns, peeled and deveined
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
- For the cilantro
- lime sauce:
- 1 cup fresh cilantro leaves and stems
- 2 limes, zested and juiced
- 1/4 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1/3 cup extra virgin olive oil
Instructions
- Prepare the salmon and prawns by seasoning them with salt and pepper to taste.
- In a large skillet, heat 1/4 cup of olive oil over medium high heat.
- Carefully place the salmon fillets and prawns into the skillet and cook for 5 minutes per side or until cooked through and golden brown.
- Remove the seafood from the skillet and set aside to rest for a few moments.
- In the meantime, prepare the cilantro lime sauce by combining fresh cilantro leaves and stems, lime zest and juice, salt, pepper, and olive oil in a blender. Blend until smooth.
- To serve, drizzle the cilantro lime sauce over the seared salmon and prawns, and enjoy!
