Ingredients

  • 4 large eggs
  • 4 slices of bacon
  • 1 cup button mushrooms, sliced
  • 1/4 cup green onions, chopped
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Cook the bacon in a pan until crispy, then set aside. Reserve 2 tablespoons of bacon grease.
  2. In the same pan, sauté mushrooms and green onions in bacon grease until tender. Season with salt and pepper. Set aside.
  3. Beat the eggs in a bowl and season with salt and pepper.
  4. Heat the reserved bacon grease in a non stick frying pan or omelette pan.
  5. Pour beaten eggs into the pan, let set for a few seconds then stir gently to form large curds.
  6. Add the cooked mushroom mixture onto half of the egg omelette.
  7. Fold the other half over the filling and cook until the egg is set.
  8. Place the omelette on a plate, garnish with crispy bacon slices and additional green onions.
