Ingredients
- 4 large eggs
- 4 slices of bacon
- 1 cup button mushrooms, sliced
- 1/4 cup green onions, chopped
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- Cook the bacon in a pan until crispy, then set aside. Reserve 2 tablespoons of bacon grease.
- In the same pan, sauté mushrooms and green onions in bacon grease until tender. Season with salt and pepper. Set aside.
- Beat the eggs in a bowl and season with salt and pepper.
- Heat the reserved bacon grease in a non stick frying pan or omelette pan.
- Pour beaten eggs into the pan, let set for a few seconds then stir gently to form large curds.
- Add the cooked mushroom mixture onto half of the egg omelette.
- Fold the other half over the filling and cook until the egg is set.
- Place the omelette on a plate, garnish with crispy bacon slices and additional green onions.
