Ingredients

  • 1. 8 large eggs 2. 1/2 lb raw shrimp, peeled and deveined 3. 1 tbsp coconut oil 4. 1 cup kale, chopped 5. 1 cup mixed greens (spinach, arugula, etc.) 6. Salt & pepper to taste 7. Garlic powder, to taste 8. 2 green onions, thinly sliced 9. Fresh cilantro leaves for garnish

Instructions

  1. In a bowl, beat the eggs with salt, pepper, and garlic powder. Set aside.
  2. Heat oil in a non stick skillet over medium heat. Add chopped kale and cook until slightly softened, about 3 minutes. Transfer to a plate and set aside.
  3. Add mixed greens to the same skillet and cook until wilted, about 1 minute. Remove from skillet and set aside with kale.
  4. Add half of the beaten eggs to the skillet and cook like an omelette. Flip when almost set and cook the other side for a minute or so. Transfer to a plate and cut into two equal parts.
  5. In the same skillet, add shrimp and cook until pink and opaque. Season with salt and pepper.
  6. Combine cooked kale, mixed greens, and egg omelette on one side of the plate. Arrange the cooked shrimp on top of the greens and garnish with green onions and fresh cilantro leaves.
  7. Serve immediately.
