  • 1 lb cauliflower, cut into florets
  • 4 large carrots, chopped
  • 3 large onions, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 cups wild mushrooms, sliced (e.g., cremini, shiitake)
  • 1/4 cup tomato paste
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary, chopped
  • Salt and pepper, to taste
  • 3 tbsp butter
  • 1/2 cup heavy cream
  • 1 large egg, beaten
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook ground beef with onions, garlic, carrots, and mushrooms until browned and vegetables are tender. Drain excess fat and stir in tomato paste, thyme, rosemary, salt, and pepper. Cook for another 5 minutes, then set aside.
  3. Steam cauliflower florets until tender. In a blender or food processor, blend with butter, heavy cream, egg, and Parmesan cheese until smooth. Season with salt and pepper to taste.
  4. Spoon ground beef mixture into an ovenproof dish, then spread the cauliflower mash evenly over the top.
  5. Bake for 25 30 minutes, or until the top begins to brown and the edges are bubbling. Let it rest for 10 minutes before serving.
