Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 4 slices bacon
  • 1 small head cauliflower, cut into florets
  • 2 cups heavy cream
  • 1/4 cup butter
  • 1/3 cup crumbled blue cheese
  • 1/4 cup ground black peppercorns
  • 1/4 cup chicken broth
  • 2 tbsp olive oil
  • 2 tbsp finely chopped parsley
  • 1 clove garlic, minced
  • Freshly ground salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season the chicken breasts with salt and pepper. Wrap each breast with two slices of bacon, securing with toothpicks if necessary. Place on a baking sheet and roast for 20 25 minutes, until cooked through and internal temperature reaches 165°F (74°C). Remove from oven, let rest for 5 minutes, then slice into thick pieces. For the cauliflower mash, steam or boil the cauliflower florets until tender. Drain well and return to the pot. Add heavy cream, butter, and blue cheese, stirring until melted and smooth. Season with salt and pepper. Prepare the peppercorn gravy by melting 2 tablespoons of butter in a saucepan over medium heat. Add garlic and cook for 1 minute, then whisk in ground black peppercorns, chicken broth, and remaining heavy cream. Simmer until thickened, about 5 minutes. Season with salt and pepper to taste. To plate, place a dollop of cauliflower mash on each of two plates. Arrange sliced chicken on top, spoon gravy over the chicken, and garnish with chopped parsley.
