Keto Egyptian-Inspired Zucchini Boats Stuffed with Spiced Ground Beef

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Wash and trim the ends of the zucchini. Using a spoon or melon baller, scoop out the center flesh, leaving about 1/4 inch thickness in the shell.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
Add ground beef to the skillet, breaking it up with a spatula. Cook until browned, then add cumin, coriander, salt, and pepper. Stir well to combine.
Fill each zucchini boat with the spiced ground beef mixture. Place them on the prepared baking sheet.
Bake for 20 25 minutes, or until the zucchini is tender but not mushy.
Remove from the oven and sprinkle feta cheese over the top of each boat. Return to the oven for an additional 3 4 minutes until the cheese is melted and slightly golden.
Let cool for a few minutes, then garnish with fresh parsley before serving.
