3 tbsp sugar substitute (e.g., erythritol or stevia)
2 cloves garlic, minced
1 tsp freshly ground black pepper
1 medium cauliflower, grated to make rice
2 tbsp butter or coconut oil
6 large eggs
Salt and pepper, to taste
Instructions
In a shallow dish, combine the beef slices, soy sauce, vinegar, water, sugar substitute, garlic, and black pepper. Marinate for at least 30 minutes or overnight for best results.
Heat a non stick pan or griddle over medium heat. Cook the marinated beef until browned and cooked through. Set aside.
In another pan, melt the butter or heat the coconut oil over medium heat. Add the grated cauliflower and cook until tender, about 5 7 minutes. Season with salt and pepper to taste. Keep warm.
Fry the eggs to your preferred style.
Assemble the dish by placing a portion of Cauliflower Rice on each plate, followed by Tapa slices and a Fried Egg on top.
Chefβs Insight
The secret to tender Tapa lies in thinly slicing the beef and marinating it well. For an extra touch, finish the dish with a drizzle of coconut aminos.
