Instructions

  1. a. Prepare the seafood satay skewers by marinating the shrimp, squid, and fish in a mixture of lime juice, minced ginger, garlic, coriander, cumin, turmeric, salt, and pepper for at least 30 minutes. b. In a food processor, blend the roasted peanuts, coconut oil, water, and remaining spices until smooth to create a creamy peanut sauce. Set aside. c. Thread the marinated seafood onto skewers, evenly coating them with any remaining marinade. d. Preheat your grill or oven safe skillet to medium heat, and cook the seafood skewers for about 4 minutes per side or until fully cooked and golden brown. e. Serve the seafood satay hot, drizzled with peanut sauce, garnished with fresh cilantro, and accompanied by lime wedges.
