  • 2 (8 oz) sirloin steaks, 1" thick
  • 2 cups cauliflower florets
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 zucchini, sliced into rounds
  • 1 yellow squash, sliced into rounds
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 425°F (218°C).
  2. Season steaks with salt and pepper on both sides.
  3. In a large oven safe skillet, heat olive oil over medium high heat. Sear steaks for 2 minutes per side, then transfer skillet to the preheated oven. Bake for 6 8 minutes until desired doneness is reached. Remove from oven and let rest for 5 minutes before slicing.
  4. In a separate oven safe dish, toss cherry tomatoes, zucchini, and yellow squash with olive oil, salt, pepper, thyme, and rosemary. Roast in the preheated oven for 20 minutes until tender and slightly charred.
  5. Meanwhile, steam cauliflower florets until tender. In a large bowl, mash cauliflower with butter and minced garlic until creamy. Season with salt and pepper to taste.
  6. Slice the rested sirloin steaks and arrange on plates alongside roasted vegetables and mashed cauliflower. Drizzle pan juices from steak over the dish for added flavor.
