  • 4 large eggs
  • 2 cups spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 lb sucuk (Turkish spicy sausage), sliced
  • 1/4 lb pastırma (Turkish air
  • dried beef), thinly sliced
  • 1/4 lb halloumi cheese, cubed
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large non stick pan, heat olive oil over medium heat. Add sucuk and pastırma slices, cook until browned on both sides, about 2 minutes per side. Remove from pan and set aside. In the same pan, add cubed halloumi cheese. Cook for 1 2 minutes on each side or until golden brown. Remove from pan and set aside. In a separate non stick pan, crack eggs into individual cups and carefully place them in the pan. Season with salt and pepper to taste. Cook over medium heat, cover, and cook until whites are set and yolks are cooked to your desired consistency. On two serving plates, evenly distribute spinach and cherry tomatoes. Top with halloumi cheese, sucuk, pastırma, and eggs. Garnish with fresh dill and parsley.
