Instructions

  3. In another bowl, whisk together the eggs, melted butter, stevia sweetener, lemon zest, and vanilla extract.
  4. Gradually add the wet ingredients into the dry mixture until fully combined. The dough should be smooth and slightly sticky.
  5. Roll out half of the dough between two sheets of parchment paper to form a large rectangle.
  6. Spread the apple slices evenly over the rolled dough, leaving a border around the edges. Sprinkle with cinnamon.
  7. Carefully roll up the dough and apples into a tight log, sealing the edges as you go. Transfer to a parchment lined baking sheet, seam side down.
  8. Bake for 30 minutes, then reduce heat to 325°F (160°C) and bake for an additional 40 minutes or until golden brown. Let cool for 10 minutes before slicing.
  9. To prepare the almond cream, mix together almond flour, stevia sweetener, egg, melted butter, and vanilla extract in a small bowl. Spread over the cooled strudel and return to the oven for 5 more minutes.
