  • 2 Large egg whites 3 Tbsp Erythritol 1/4 tsp Cream of tartar 3 Tbsp Almond flour 2 Tbsp Unsweetened cocoa powder 1/2 Cup Raspberries, fresh or frozen 1/2 Cup Heavy cream 2 oz Dark chocolate, sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. In a large, clean bowl, beat egg whites until foamy. Add cream of tartar and continue to beat until soft peaks form.
  3. Gradually add erythritol while continuing to beat until stiff peaks form.
  4. Sift almond flour and cocoa powder together in a separate bowl. Gently fold into the whipped egg whites, being careful not to deflate them.
  5. Spoon the mixture into a piping bag with a large star tip. Pipe 6 equal sized stars onto the parchment paper, leaving space between each star for even baking.
  6. Bake for 12 minutes or until set and firm to the touch. Remove from oven and let cool completely on a wire rack. Cook: Prep 15 mins, Cook 12 mins, Total 27 mins
