Ingredients
1 cup almond flour
2 tablespoons psyllium husk powder
2 tablespoons flaxseed meal
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 large eggs, lightly beaten
3 tablespoons unsalted butter, melted
For the Herbed Cream Cheese Dip:
4 ounces cream cheese, softened
2 tablespoons fresh chives, chopped
1 tablespoon fresh dill, chopped
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the almond flour, psyllium husk powder, flaxseed meal, salt, baking powder, garlic powder, and onion powder.
Gradually add the beaten eggs and melted butter to the dry ingredients, stirring until a dough forms.
Using your hands or a spoon, roll the dough into small bite sized balls and place them onto the prepared baking sheet.
Flatten each ball slightly with the back of a spoon or your fingers.
Bake for 12 15 minutes, or until the pretzel bites are golden brown. Remove from the oven and let them cool on the baking sheet.
To prepare the herbed cream cheese dip, whisk together the softened cream cheese, chopped chives, dill, garlic powder, salt, and pepper in a small bowl. Serve alongside the cooled pretzel bites.
