Ingredients
1 cup heavy whipping cream
2 tbsp unsweetened cocoa powder
1 tsp instant coffee granules
3 tbsp almond flour
1/4 tsp cardamom powder
2 tbsp sugar substitute
6 large egg yolks
1 cup strong brewed coffee, cooled
20 ladyfingers, preferably gluten

Instructions
In a bowl, combine the cocoa powder, instant coffee granules, almond flour, cardamom powder, and sugar substitute. Mix well and set aside.
In a separate bowl, beat the heavy whipping cream until soft peaks form. Fold in 1/3 of the prepared dry mixture to lighten the texture.
In another bowl, whisk together the egg yolks and remaining dry mixture until smooth. Place the bowl over a double boiler and whisk continuously until the mixture thickens and coats the back of a spoon, about 8 10 minutes.
Remove the bowl from the double boiler and add the melted dark chocolate. Stir until well combined. Let it cool to room temperature.
Fold the cooled chocolate mixture into the whipped cream until well combined.
Dip each ladyfinger briefly in the brewed coffee and arrange a layer of them in the bottom of a 9x13 inch dish or individual serving glasses.
Spread half of the mocha cream over the soaked ladyfingers. Repeat with another layer of dipped ladyfingers and finish with the remaining mocha cream.
Chill for at least 4 hours or overnight before serving.
