  • 2 cups rutabaga, peeled and diced
  • 2 cups carrots, peeled and diced

  • 4 medium cauliflowers, cut into florets

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until softened and fragrant.
  3. Add ground beef to the skillet, breaking up any lumps with a wooden spoon. Cook until browned and cooked through. Season with salt and pepper. Set aside.
  4. In a separate pot, boil rutabaga and carrots until tender. Drain well and set aside.
  5. Steam cauliflower florets until very soft. Transfer to a large mixing bowl.
  6. Add heavy cream, butter, and Parmesan cheese to the steamed cauliflower. Mash with a potato masher or hand mixer until smooth and creamy. Season with salt and pepper.
