  1. In a pan, heat olive oil over medium heat. Sauté spinach and mushrooms until they are softened and fragrant. Season with salt and pepper. Remove from heat and set aside.
  2. Carefully scoop out the avocado flesh, leaving a thin layer to act as a shell. Reserve the scooped out flesh for another use or mash it into guacamole.
  3. Fill each avocado boat with the sautéed spinach and mushroom mixture.
  4. Arrange the bacon slices on top of the spinach and mushroom filling.
  5. In a separate pan, bring water to a gentle simmer for poaching eggs. Crack each egg into a small bowl, then gently slide it into the simmering water. Cook for 3 4 minutes until the whites are set but yolks remain soft. Use a slotted spoon to remove and place on top of the bacon.
