  • 1 tbsp rice vinegar
  • 4 cups mixed baby greens
  • 1 scoop unflavored whey protein powder
  • 2 tsp matcha green tea powder
  • 1 ripe banana
  • 1/2 cup unsweetened almond milk
  • 1 tbsp chia seeds

Instructions

  1. a. Prepare the spicy salmon by mixing wasabi powder and soy sauce together in a bowl, then coat the salmon fillet evenly with the mixture. Marinate for at least 30 minutes. b. In a blender, combine banana, almond milk, matcha green tea powder, and whey protein powder. Blend until smooth and creamy. Set aside in the refrigerator. c. Slice avocados and set aside. Prepare nori sheets by cutting them in half. d. To make the rolls, place a nori sheet on a bamboo mat. Add a thin layer of sushi rice (made from cooked sushi rice mixed with seasoned rice vinegar). Place cucumber slices and avocado slices horizontally across the center of the nori. e. Using the bamboo mat, roll the nori into a tight roll, then slice into bite sized pieces. Repeat for all four rolls. f. To serve, place mixed baby greens on individual plates and arrange the salmon avocado rolls on top. Pour the chilled matcha green smoothie into glasses or bowls alongside the rolls. Garnish with a sprinkle of chia seeds for added texture.
