  • 1. 4 cups cooked cauliflower rice 2. 1 cup kimchi, roughly chopped 3. 2 tablespoons sesame oil 4. 2 green onions, thinly sliced 5. 4 large eggs, beaten 6. Salt and pepper, to taste 7. Optional: 1/2 cup diced cooked ham or bacon 8. Optional: Sesame seeds for garnish

Instructions

  1. In a large pan, heat sesame oil over medium heat.
  2. Add green onions and cook until fragrant, about 1 minute.
  3. Add kimchi and cook for 2 minutes, stirring occasionally.
  4. Add cooked cauliflower rice and mix well, cooking for another 3 4 minutes.
  5. If using ham or bacon, add it to the pan during step 4 and mix well.
  6. Make a well in the center of the pan and pour beaten eggs into it. Let cook undisturbed for about 20 seconds, then scramble until just set.
  7. Season with salt and pepper, to taste.
  8. Garnish with sesame seeds, if desired.
