Ingredients

  • 4 cups cooked cauliflower rice
  • 1 cup kimchi, roughly chopped
  • 2 tablespoons sesame oil
  • 2 green onions, thinly sliced
  • 4 large eggs, beaten
  • Salt and pepper, to taste
  • Optional: 1/2 cup diced cooked ham or bacon
  • Optional: Sesame seeds for garnish

Instructions

    In a large pan, heat sesame oil over medium heat.

    Add green onions and cook until fragrant, about 1 minute.

    Add kimchi and cook for 2 minutes, stirring occasionally.

    Add cooked cauliflower rice and mix well, cooking for another 3-4 minutes.

    If using ham or bacon, add it to the pan during step 4 and mix well.

    Make a well in the center of the pan and pour beaten eggs into it. Let cook undisturbed for about 20 seconds, then scramble until just set.
