  • range eggs
  • 1 cup spinach, fresh or frozen
  • 1/2 cup avocado, ripe and creamy
  • 3 oz smoked salmon, sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup kumara (sweet potato), grated
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions
