Keto Nigerian Brunch: Shakshuka-Inspired Eggs with Plantain Chips and Spicy Suya Seasoning

Ingredients

  • 8 large eggs 1 can (28 oz) crushed tomatoes 1 medium onion, finely chopped 4 cloves garlic, minced 1 tbsp tomato paste 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp smoked paprika 1/2 tsp salt 1/4 tsp black pepper 2 plantains, sliced into 1/8
  • inch rounds 1 tbsp coconut oil Spicy suya seasoning (to taste) Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat 1 tablespoon of coconut oil over medium heat. Add onion and garlic, and sauté until softened.
  3. Stir in tomato paste, crushed tomatoes, cumin, coriander, smoked paprika, salt, and black pepper. Simmer for 5 minutes.
  4. Remove skillet from heat and carefully crack eggs into the sauce, spacing them evenly. Transfer to oven and bake for 10 12 minutes or until egg whites are set and yolks reach your desired consistency.
  5. While the shakshuka cooks, prepare plantain chips by heating another tablespoon of coconut oil in a pan over medium heat. Add plantain slices in a single layer, cooking for 3 4 minutes per side or until golden and crispy. Sprinkle with spicy suya seasoning as they cook.
  6. Remove shakshuka from oven and garnish with fresh parsley. Serve immediately alongside the plantain chips.
