Suya is a popular Nigerian dish consisting of skewered, seasoned meat, typically made with beef. The traditional method involves grilling, but our recipe introduces an air frying technique for a modern twist.
Ingredients
- 2 lbs beef sirloin, cut into bite-sized cubes
- 1/4 cup ground peanuts
- 2 tbsp kosher salt
- 1 tbsp ground black pepper
- 1 tsp ground ginger

- 1 tbsp paprika
- 1/4 tsp ground cumin
- 1/4 tsp ground cardamom
- 2 tbsp olive oil
- 1 cup chopped kale, for garnish
- 1/2 cup diced red bell pepper, for garnish
- 1/2 cup cherry tomatoes, for garnish
Instructions
- 1
In a large bowl, combine the ground peanuts, salt, black pepper, ginger, garlic, paprika, cumin, and cardamom. Mix well to create your Suya spice blend.
- 2
Add the beef cubes to the bowl with the spice blend and toss until each piece is evenly coated.
- 3
Preheat your air fryer to 400°F (200°C).
- 4
Place the seasoned beef cubes in a single layer in the air fryer basket, ensuring they do not touch.

Cook for 10 minutes, then flip and cook for another 5 minutes or until desired doneness is reached.
- 6
Remove the Suya Bites from the air fryer and let them rest for 2 minutes.
