Keto Nigerian Suya Bites with Cauliflower Rice & Zucchini Noodles Recipe

Ingredients
1 lb beef, cut into bite
sized pieces 1 cup cauliflower rice 2 medium zucchinis, spiralized 4 tbsp coconut oil 3 tbsp ground peanuts 2 tbsp ground ginger 2 tbsp ground cameroon pepper (aji) Salt and black pepper, to taste 1 tsp ground nutmeg 1/2 cup fresh parsley, chopped 2 tbsp cilantro, finely chopped
Instructions
In a mixing bowl, combine the ground ginger, ground cameroon pepper, salt, black pepper, and ground nutmeg to make the suya spice blend.
Rub the spice blend onto the beef pieces and let them marinate for 30 minutes.
Preheat your air fryer to 400°F (200°C).
Air fry the marinated beef pieces for 15 20 minutes, or until they reach your desired level of doneness.
In a large skillet, heat 2 tablespoons of coconut oil over medium heat and sauté the cauliflower rice for about 7 8 minutes, or until tender. Season with salt and pepper to taste.
In another skillet, heat 2 tablespoons of coconut oil and sauté the spiralized zucchini noodles for about 4 5 minutes, or until al dente. Season with salt and pepper to taste.
Combine the cooked cauliflower rice and zucchini noodles in a serving dish and garnish with chopped parsley and cilantro.
Arrange the air fried suya bites on top of the rice and noodles, and serve immediately.
