While the skewers are baking, prepare the cilantro mint chutney by blending fresh cilantro, mint leaves, green chili, lime juice, salt, and water in a food processor until smooth. f. Remove the skewers from the oven and allow them to cool slightly. Drizzle with additional ghee if desired, and garnish with fresh cilantro leaves. Serve immediately with the prepared chutney on the side.
