Instructions

Set aside. b. In a separate bowl, mix together pineapple, red bell pepper, cilantro, red onion, lime juice, 1/4 tsp salt, and 1/4 tsp black pepper to make the salsa. c. Season fish fillets with salt and black pepper, then brush with olive oil. Grill or pan sear fish for 4 5 minutes per side until cooked through. d. Serve grilled fish over coconut lime rice, topped with fresh pineapple salsa.
