Instructions

  1. In a large microwave safe bowl, melt the shredded mozzarella cheese in 30 second intervals until fully melted and smooth. Stir between each interval.
  2. Add almond flour, eggs, smoked paprika, garlic powder, salt, and pepper to the melted cheese. Mix well until a dough forms.
  3. Cover the dough with plastic wrap and refrigerate for 30 minutes.
  4. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  5. Remove the dough from the fridge, roll it into small balls, and place them on the prepared baking sheet. Flatten each ball slightly.
  6. Bake for 12 14 minutes or until golden brown. Allow to cool.
  7. To make the aioli, whisk together mayonnaise, lemon juice, smoked paprika, garlic powder, salt, and pepper in a small bowl.
