  • 1 medium head cauliflower, cut into florets 2 cups almond flour 2 large eggs 4 tablespoons butter, melted Salt and pepper, to taste 8 ounces smoked salmon, chopped 4 ounces cream cheese, softened 2 tablespoons fresh dill, chopped 1 tablespoon fresh chives, chopped 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine cauliflower florets, almond flour, eggs, butter, salt, and pepper. Mix until well combined.
  3. Shape the mixture into 12 equal sized balls and place them onto the prepared baking sheet. Flatten each ball slightly to form a piroshki shape.
  4. Bake for 20 minutes or until golden brown. Remove from the oven and let cool completely on a wire rack. e) In a small bowl, combine smoked salmon, cream cheese, dill, chives, and lemon zest. Mix well to incorporate all ingredients. f) Slice each piroshki in half horizontally and fill with the salmon mixture. Top with the other half and serve immediately.
