Instructions

  1. Cut the eggplant into 1 inch cubes and set aside.

  4. Add cumin, coriander, turmeric, paprika, black pepper, and salt to the pan and cook for another minute.

  6. Add chicken breasts and eggplant cubes into the sauce, ensuring they are fully submerged. Cover and let it cook for 20 minutes.
  7. Carefully turn over the chicken breasts and eggplant, then cover and continue cooking until chicken is cooked through and eggplant is tender, about another 15 20 minutes.
  8. Remove from heat and serve immediately, garnished with fresh cilantro and lime wedges on the side.
