  • 1 lb shrimp, peeled and deveined 1 lb white fish fillets, cut into bite
  • sized pieces 2 cups cauliflower rice 4 tbsp coconut oil 2 medium onions, finely chopped 6 cloves garlic, minced 3 tbsp curry powder 1 tsp turmeric 1 tsp ground black pepper 1/2 cup unsweetened coconut milk Salt, to taste Fresh cilantro, for garnish Lime wedges, for serving

Instructions

  1. In a large pan, heat 2 tbsp of coconut oil over medium heat. Add onions and garlic, sauté until golden brown.
  2. Stir in curry powder, turmeric, and ground black pepper. Cook for 1 2 minutes, or until fragrant.
  3. Gradually add 1 cup of water, stirring constantly to avoid lumps. Bring to a boil, then reduce heat and simmer for 5 minutes.
  4. In another pan, heat the remaining coconut oil. Sauté shrimp and fish pieces until cooked through, about 3 4 minutes.
  5. Add seafood to the curry sauce, stirring well to combine. Cook for an additional 2 3 minutes.
  6. Prepare cauliflower rice according to package instructions.
  7. Serve curry over cauliflower rice, garnish with fresh cilantro and lime wedges.
